These vegan pancakes are delicious! I don’t follow a specific diet, I am just curious and I like to find recipes from different kind of diets. I am mostly vegetarian but I make exception time to time for meat (but trust me, just when my mum cooks it haha!) I am picky where the meat and poultry come from, I avoid any meat from industrial process.
These pancakes are healthy, gluten free, lactose free and yummy! I had to cook it twice because I ate all the pancakes in three days and didn’t take any pictures 🙈
Just few ingredients are needed: kale, chickpeas, chickpea flour, and spices! If you don’t have chickpea flour, you can replace it by rice flour and regular wheat flour (in that case your pancakes will not be gluten free anymore).
Chickpeas are high in fiber and protein. Kale is rich in vitamins K, A, and C (100 g of kale covers 150% of the daily requirement of C-vitamin!)
Ingredients
For 7 pancakes
Canned chickpeas (drained weight around 260 g)
100 g of kale
2 tablespoons of chickpea flour
2 tablespoons of limon juice
2 tablespoons of olive oil
1 pinch of garlic powder
2 pinches of tumeric powder
1 pinch of salt
Step by step
- Drain the chickpeas.
- Wash kale and spin dry.
- Put all the ingredients in the food processor.
- Mix to a smooth consistency.
- Make small balls and squash slightly with your hands.
- Heat olive oil in sauce pan and cook over a low heat.
- Cook for 4-5 minutes on each side.
